Nutella Cheesecake

This cheesecake is a wonder recipe. Every time I’ve made it, people end up thinking I’m a masterchef. Little do they know that the only thing you need to know to make this cheesecake is how to use a blender. This cheesecake is classic Nigella- painfully easy, but ridiculously indulgent. And when I read the recipe on her site for the first time, I knew I had to try it.

Peanut Butter Cookies

Hello again! So the reason I’ve been MIA is that I’ve been studying for the (dreaded) GMAT. The last couple of weeks have been full of intense studying, and well, my blog has been conveniently forgotten :/ But not for long!

When I study, I am constantly eating, especially dessert. But since I don’t have the time nor the inclination to bake anything, I make do with a spoonful of nutella or some peanuts and jaggery. Off late I’ve been eating peanut butter and chocolate chips ( a make shift peanut butter cup!) So for my next post I decided to do something with peanut butter and chocolate and found this recipe for some super peanut butter & snickers cookies.

Red Velvet

When it comes to Valentines Day, I’m pretty neutral– I don’t have the sudden urge to watch multi starcast romantic comedies, nor do I rant about the commercialization of the day while imagining cupid’s head on the bulls eye of a dartboard. But I saw this on Pinterest the other day as a  Valentines Day card, and I thought to myself what better way to celebrate the Day of Love than with the one thing that I will always love- cake!

And red being the colour of the season, there was but one obvious choice- Red Velvet!

Chocolate Tart

Last week, while making cheesecake, I made too much of the biscuit base ( read about it here) which left me with twice the amount of base I needed. I put the extra away in my fridge, and discovered it a few days later, and this just so happened to coincide with an intense chocolate craving that I was having.

I found some dark chocolate at home, and some regular Amul cream, and voila- a chocolate tart to satisfy my cravings!

Cheesecake for Lunch!

So this is my first recipe on the blog! I love to eat food, and it turns out I like to cook too. One of my resolutions this year was to do more with my time, and the plan is to make something yummy at least once a week. I hope I stick to it!

It was a friend’s birthday on Monday, and the most appropriate gift I could think of was a good, dense fulfilling cheesecake. So I did what any novice would do- I googled it 😀

I think my exact words were ‘Easy baked cheesecake’ and I used the first recipe in the search results which you can see here.

I used Britannia Digestive biscuits for the base, and Britannia cream cheese for the filling.

Couple of tips :

1. Add butter to your biscuits a little bit at a time and mix as you go. I ended up adding too much butter and had to add a lot more biscuit to even it out. So I had a lot more of the base than I wanted. Now I need to figure out what to do with the rest of the biscuit mixture.

2. The recipe calls for 4 eggs. After adding three the mixture was quite runny so I stopped there. Add the eggs one at a time and mix, so you know whether to add another or not.

Even with all the blunders, it was delicious! If you try it out, let me know how it turns out :)
